For most countries, its not official, its just the sport that is most popular and has the longest history in that country. Most people consider baseball to be the national sport of the US, because it was invented here and has been played for over 100 years.

Some countries actually make it official by an act or declaration of their government, I think Ireland did this with curling. (not the ice version you see at the olympics, its played with a small ball and a wide flat stick).
