That's probably the best question I've come across yet. Well done you!
I suppose India and China are both ancient civilisations and also the two largest developing countries in the world.
They are the two most populous countries in the world.
They are also developing countries which have recently seen huge rates of growth. They have similar views on the world around them.
Can't answer why their people look so different but it certainly intrigues me. I'll keep watch on the answers to see if someone else can shed light on this. Thanks for making me really think!
;-)

The Chinese were split into different empires years ago before the Chi region fought and united all parts. They generally look the same towards the north of the country but the further south where the climate is a lot hotter, they tend to get more darker skinned but their feature remain similar. Probably due to the natural barrier between the two countries, being the Himalayas, inter-racial relationships were scarce. There does seem to be a similarity in their religions of Buddism and Hinduist.
Besides that they both tend to get extremely rich in the UK running curryhouses.

They are connected in the North, so if you look carefully, the Mongolians who live North of China, where it borders Russia, look like the fair-skinned North Indian residents.
Because the countries are extremely large, they diversify in language, skin colour, culture so the people South of India and south and East China look very different, speak very differently.

I'm guessing that's it because the ancestors of each came from very different places before they made India/China their home.

Science has proven through the human genome studies that we are all more alike than we are different.

well, there's a huge great mountain range between them both... so before we had the technology to fly it was unlikely that the people would meet to inter-breed.
...and so two distinct races of people developed.
