It depends on the anime, but I think that the longest an anime should be is 50 some episodes (two seasons) with one or two movies. Some anime should really just be confined to the normal 26 episode season, as they just end up flooded with fillers later.
If an anime is epic in nature, like Naruto or Tsubasa Chronicles, then it is perfectly fine to run over one or two seasons with more than two movies. But if the show begins deviating too much from the original manga or adding fillers, then the series should really just be temporarily stopped to give the artist time to catch up. In Tsubasa Chronicles, there's about one season per year, which gives CLAMP time to produce more chapters. But Naruto (due to its popularity) runs every week nonstop, which just creates a huge number of plotless, useless, and almost Pokemon quality fillers.
Generally, if the anime starts going on a tangent away from the manga, then it's time to stop or at least take a break. The few exceptions are Fullmetal Alchemist, which goes extremely far from the original manga. However, the plotline is both creative and strong in the anime, instead of tapering off to nothing (as often happens when anime deviates).

Really depends on the story. If it is interesting and has a mass public appeal then it should obviously be in print for longer then one that does not do as well.
A series such as Pokemon or Digimon have gain mass appeal with thousands of children all around the world. Yet eventually new stories will run out. Pokemon is basically now repeating the story lines of previous seasons and the only really new things are the Pokemon encountered. The Pokemon movies have already gone past the point where they are not even mildly interesting. (I think that they are not even enough public interest to show the movies in the theaters, and they just go straight to video)
Overall an anime series despite being really good, will always become mundane if it remains too long. The trick is to leave the public with a sense of completion to the story but still to keep them frantically searching the web for information about the series.
The greatest tragedy that could happen is a great anime to become pathetic by trying to maintain it's former glory.

It really does depend on the Anime. The longest running one I know of is Sailor Moon. 4 seasons, 133 epps. Various other episodes and 6 movies.
If the anime has wide appeal and good writing, then it could last a very long time. Ranma 1/2 had 7 seasons and 161 episodes, various OAVs and Movies. Ranma had a huge appeal. I do admit though, I love Ranma, me and my friend split all 7 seasons, but it does begin to get tedious. I watched season 7 only to see Akane as a cheerleader.
If the anime has wide appeal and it does well, then it could last a very long time indeed.

If you cannot hug it, then it's way too long. Series like Inuyasa, Ranma 1/2, Pokemon are so long that we start to only get the movies and stop the series on the anime and manga because we just run out of space in the house. Also, it seems like there is just no end in sight.

Nothing is too long, but once they start to insert unrelated events like fan pleasers that have no connection with the main plot, that makes it too long and really bad.
But in my opinion, one year (50~52 episodes) is best at least they have enough time to develop the characters and plot. But note, not all of them succeed in doing so, especially when the staff knows that people would be wishing for a sequel, they would extend the storyline and end up with a cliffhanger or a really lame ending (eg. Gundam Seed series)

I think a long anime can work if there's actually a reason for it to BE long. But having over 150 episodes and a lot of pointless filler gets boring very quickly. Inuyasha is one of these, unfortunately. The first half of the series was good, but now it's just dragging on and on and on. That anime needs to be about sixty episodes shorter, and get rid of ALL of the pointless filler. For instance: Kouga and the whole wolf-tribe thing is good, because it adds a little bit of a love triangle between him, Kagome, and Inuyasha. But the episodes with Kouga and his fiance were just stupid, especially the demon featured in them.

Most series only have 26 episodes. As for the movies it depends. On the length it depends on how absorbed and attached you are to the characters.

...has anybody else notice that it takes over 5 episodes for DBZ to portray a fight that should last only a few minutes

Well, it really depends how many plot twists they can incorporate into the story line and still make it good. The longest running one I know is Inuyasha and it seems to be getting stale, but I think that is over 150 episodes.
