Because that is the color of the National Team, called "Azzurri".
That is an historical tradition: before the creation of the Italian Republic, the Italian Regal Family (Savoia) had color "azzurro" (kind of blue) in their flag and that color was adopted by the soccer National Team to respect the Regal tradition.
Since then the color has been kept in the Italian shirt, even though it is not a color present in their National flag (green, white, red).

Azzuri refers to their blue jerseys; even though Italy's flag colors are red, white and green. Blue for the Italians is like the "blue ribbon" in many award systems meaning first place. The Italians aim to be first place so they wear blue. And that is why the name "Azzuri"
