Look for something wrapped around the rudder or in the linkage.

When is the last time you put grease in the steering cables and steering tube????
Did you even bother to look at rudder - while on trailer - spin wheel? What happened last time out - dude??
Also Check to see if there is zerk grease behind the bezel of the steer wheel.
WTLF - what to look for. At the points where the cables bend. By the steer wheel and the last bend by motor or rudder-port, these are prime spots for the cable to unravel or wear significantly.

All that's good. You didn't hit anything, maybe small floating wood or something, maybe the trailer when loading? you've checked the rudder & shaft right? Try all that stuff the other guys have recommended & then take it in. There's too many possibilities for me.
