Anything by Mario Puzo, especially The Godfather, The Sicilian, Omerta, and The Last Don. Also, Nicholas Pilleggi has written a ton of great Mafia books, including Wiseguy, which is based on the life of Henry Hill. All of those are great, but The Godfather is partiularly good.
EDIT: I thought I should include a few snippets about other peoples answers. First of all, Mario Puzo didn't write The Godfather Returns (he was dead then), Mike Winegardner did. I haven't read it, but I hear it's somewhat decent. Also, the Don "somebody" mentioned is Don Delillo, and he did writte Underworld, although I'm unaware of any Mafia angle to that. Of course, I could be wrong about that.

Read The Godfather by Mario Puzo. Not only is that a classic mafia book, it inspired the whole trilogy of the movies. Also Mario Puzo did a sequel to The Godfather a few years back. You should check it out but I'm sorry that I don't have a name for it. The Godfather Returns???? And read The Firm and The Client by John Grisham. Those partially have to deal with the mafia. And try the book Underworld by Don somebody, sorry, the book was published in 1997. So, good luck hunting.

The books I'm going to recommend are not primarily based on mafia.The hero belongs to a mafia family and you get to see how things are run there.How they organise security,launder money,get rid of betrayers etc.Its mainly about werewolves.
Hunter's moon,Moon's web are novels written by Cathy Clamp and C.T. Adams about a werewolf Tony Giodone who is an assassin-for-hire by profession.It is written from Tony's first person POV (point of view).Tony meets his new client, one Suzi Quentin. She wanted someone offed. Well, this is child's play to our boy...um...wolf...Tony. Only she knocks him for a loop when she tells him the name of the person she wants killed - herself!So begins the story.
