does anyone know what the pilot of a ship is called. By ship I mean like a galley, man o war, or frigate. (Don't really know where to post this qeustion.)

You are probably thinking of the word "helmsman", who is in charge of steering the ship under the direction of the navigator or other senior officer.

A ships' pilot is a skilled navigator, who knows the hazards and currents in an area of confined water (such as a harbour), who comes aborad a ship to help it traverse the hazardous area.
