I live in Kalamaxoo, Michigan...about 35 miles from Lake Michigan and have lived here all of my 50 years...so I suppose I should give your excellent question some consideration. The Great Lakes, if you are not aware, are "fresh-water" lakes regardless of their size. Therefore the fish that come from the lakes are freah-water varieties...with a few other larger fish of which I haven't a clue as to what they are. But as far as other "foods" that we of the Great Lakes have, is honestly no different than any other states...at least to the best of my knowledge. I have lived briefly in Kansas...and the food their was the same as here...and I lived for a while in Florida...and still, very little difference except that Florida, of course, had additional types of food from the Ocean and Gulf which you don't find as every-day food here in Michigan. But in truth my friend, the food here in Michigan is no different than that which you find in any other State of the USA.

What do you mean by that? Do you mean what kinds of foods do the people in the great lakes area eat?

the great lakes are full of fish (edible depending on the lake you pick and eaten in moderation).

They have zebra mussels, but I don't know if they're edible.
