If you're talking classic 70's metal, its probably Black Sabbath. An influence to everyone who has since picked-up an electric guitar, pushed their Marshall amp to 11, and tried singing in a nasal rock tone. Their style is emulated by almost everyone.
In the 80's, I'd pick Iron Maiden... Although AC/DC is another huge influence from that era. Both are musically talented, diverse, and influential. Both had irreplaceable original singers who defined the metal style of that era. (excluding hair-metal screamers) Both continue to perform today.
In the 90's a good case could made for Metallica, whose huge underground following demanded that metal be given popular radio airplay. Without late 80's airplay from the "And Justice for All" album, I am convinced we wouldn't be hearing heavy metal on the radio today.
Overall for the metal genre as a whole, my choice would be AC/DC. They successfully bridged the gap between 60's blues/rock & 80's metal, making successful records and keeping rock mainstream even through the 80's Wham & Culture-Club days. Angus is a rock god

Metallica they have produced many records and have a huge following. they have been selling out shows for years. They have lost bassists and kept going. Lars has be little the fans with the whole napster thing. That made them appear ot be all about money. they got through that.
James got burned over seas and the fans rioted cause they were so distressed about no show (well and axel rose is a jerk) James got through that.
James went through rehab and is back writing songs. He wrote a ballad for his girlfriend and put it on their record. That was a ballsy thing to do. They are a emtal band and they put out a ballad. But you knwo what its awesome and everyone loves it.

Black Sabbath, with either Ozzy or Ronnie James Dio as the front man (take your pick). Everything metal has been, is now, and will be is due to Black Sabbath and the guitar playing of Tommy Iommi.

Black Sabbath and Deep Purple. Together they were pretty much the original pioneers of the genre. Without them, the metal may not exist as we know it.
