Taste ... I don't think so, because there are things that taste horrible and we can eat it ...

The secrets and habits are passed on from generation to generation, and i agree that it started by trial and error.
imagine how they suffered with pain those early days ,
Toothache , earache, broken bones, cuts and bruises,snakebite etc...etc...desperation probably made them try everything and they kept that which seemed to bring relief.
Most things that animals eat, we can eat as well.

I believe it must have boiled down to trial and error. I think they tried everything because they were hungry. After while they had a heirarchy of things to eat based on their preferences. As you know we all have different preferences for food but if a situation becomes desperate enough we will eat whatever is at hand. Availability also influences food choices, we tend to eat what is easy to get. Even modern men tend to eat the same things over and over. I think the answer to this question is that they ate what was easily obtainable and chose based on their preferences which were largely influenced by taste.

The watched the birds and other animals,If they ate things and didn't die the cavemen then knew they could eat it too!

Actually they didn’t. Cavemen routinely ate leaves when they were available. They also ate roots although they did so less frequently since it was more difficult to find eatable roots.

They did experiment with taste but they also observed animals who ate certain foods too to pick the foods they ate.

Somebody tried everything there was. If it was poisonous, they died and didn't have any?/more children. The smarter survivors observered what happened and didn't repeat the tragedy. Thus another evolutionary bias toward intelligence was established.
