There's a list of engineering profession that could go on and on. Since you're specific on engineering science, I also notice that its also known as Engineering Science and Mechanics. Obviously mechanics has something to do with gear.

During the 19th Century in Europe, people used to have specific symbols for different professions [imagine some kind of corporate logo per profession]. Since the latest and more revolutionary invention of the time was the steam machine, the heart of it, the gear, was taken to represent engineers, and from that time on it stands for every branch of engineering.

Since it represents the majority of engineers in mechanical. If you were talking about electrical, I'm sure a resistor would be more approriate.
Most engineers think of themselves akin to mechanical since that is the most classical of the engineering disciplines.
