What is the difference between a "computer" made by lets say Dell vs. a Mac by Apple?

PCs (the computers made by Dell and similar companies). Run Windows by default usually, but can have that changed to any operating system that supports the underlying architecture (like Linux). Macs can only run Mac OS-X (although with the new Intel chip, this is changing to allow Windows to be installed, I don't know for sure about Linux support).

PCs are also easier to modify with new hardware, etc., and are generally more flexible.

Apple products do not use the standard PC architecture so you have to use thier operating system, and can't use Widows XP, Linux, Unix or any of the 'regular' operating systems. A regular Dell-type PC is designed around the 'ATX' formfactor and you can swap out the motherboards, processor and memory for more powerful stuff without too many problems.
