They are afraid to appear vulnerable, so the hide their emotions so that observers can't figure out what they truly care about.
I think it stems from not trusting people. Many 'emotion-hiders' fear that if other people figure out the things that make them happy or sad, those people may exploit this knowledge in order to hurt them.

There are many, many different "affect displays," or ways that people show their emotions. Some don't at all, some mask their emotions, some display different emotions than they are actually feeling....
If you're really concerned about someone else's emotional state, just try asking them what they're feeling. Granted, this won't always work, especially with men I would guess, but it's worth a try!

If you're like me (For those who need to know, I have a strange mental history, minor autism (aspergers) first misdiagnosed as ADHD), I show no emotion most of the time I'm thinking or not paying attention. Some people say they think I look disgusted when I show no emotion.
P.S. I don't use antidepressants. They drive me nuts and make me crash.

May be the person is in control of his expression , this happens a lot with people who went through a tough or hardship in life or love . It also can mean that the person don;t want to show his/her emotion cause they think they may be or are vulnerable. Give them a benefit of dough. They deserve that.

Maybe they've been emotionally scarred in their past.
My husband is pretty calm and collected. But he's also a former Marine. ;)
I think if/when people have issues from their past or present, they may close up and be reserved. (keeping to themselves, putting up an emotional wall, etc.)

It means that this person has never been shown how to show emotions because more than likely, no one showed them love. I find that totally sad.
