depends on which piece!
if its something minor like an antenna, not much.
if its something big like an engine or tail, its probably going to crash.

It really depends on the piece in question. If it is a piece along the area that air comes in contact with the surface of the plane, it can cause the plane to crash. However, there are many pieces that have no major effect on the way that air is controlled while it goes over the surface. It has a lot to do with the aerodynamics of the individual craft as well. To get a good idea on the effects of air along the surface of the plane you might be able to find some videos of wind tunnel tests. On a personal note, I have seen several aircraft come in with missing panels and/or holes in a non-contact surface area and even one with a hole in the wing, while not a usual circumstance, it does happen.

I assume you mean while it's in the air. As long as it is not a wing or a part that controls the pitch of the plane, things should be okay since the plane can glide pretty well even if there is no power. It would be a hard landing but aside from some injuries, it should not be a total disaster.

I think depending on which piece the airplane might still be able to fly. Like, there was a flight either going to or coming back from Hawaii where the top of the plane ripped off but they were still able to fly and safely land.

I think the plane and shuttle scenario in Superman Returns is
a good example of that. First the tail burns off. Then one wing comes off and then the other wing comes off. If it hadn't been for Superman, that plane would've either ended up in space with the shuttle, or it would've crashed.

It depends on which piece but if its a major piece that isnt good. Hopefully that dosent happen because the plane could crash and people could get hurt..

Planes are built to be remarkably robust. If one engine, an aileron or part of the wing or tail fell off it would probably be ok. If however an entire wing or the entire rear end of the plane snapped off, then it would certainly crash because it would be uncontrolable.

Depends on how important the piece is, did it come off in the air or on the ground, was it in motion or not in motion at the time of the loss.

it depends what part of the plane. if the engine or wing falls off, then the plane will crash. but if its a little screw or something, i don't think much would happen

Answer is that it can be from nothing happens at all to a crash. It depends upon what part fell off, the skill of the pilot and luck.
