I think that this person is somehow feeling inadequate or suppressed in his/her environment therefore leading them to lash out at minor things. By doing this they can counter their inner frustrations and somehow gain superiority over the person they are arguing with.

You expect big problems to emerge and be dealt with. No matter what’s your position in the company. The phase, “All hell is breaking lose around,”comes to mind. You might have felt it coming and prepared yourself for the impact, or even been through something similar before. There is safety in that knowledge.
But the little things? It’s the little things that shouldn’t be a problem in the first place, that can unsettle you faster. It’s an insult, just plain rude. It can start to break down your foundation. You question yourself and how others identify who you are, compared on how you want to be perceived. Next thing you know you are talking to yourself and have to whip out the cell phone and pretend you are on it, so no one will think you are crazy.
Then all of those past incidents that you had let go because you were trying to be part of a team and do good team work comes to mind. And then you react from what’s really deep down inside. Than from that guarded professional persona you created to move you along the ranks.

Mainly this is caused by stress.
if someones workload is getting to them, something minor or a snide comment could set of a reaction where the person could argue and or get angry and flip out or just break down in tears or just walk off and not come back .

problems with his wife,

problems with his children
problems with you
problems with his health
if you feel this person has changed from being nice to nasty,, it might be a good idea to offer some help but not over stepping the mark
