Tells the dashboard what the temperature of the engine is running at. This can be a gauge, or an idiot light that turns on if something 'bad' is happening.
All car engines run "too hot", and typically use a radiator and coolant, - to cool the engine down. If this cooling system fails, it can do permanent engine damage. That's a bad thingy.

There are several temp sensors in the modern car. One works the temp gauge on the dash, another is much more accurate and is used by the engine management computer to measure the engine temp and finally the air temp of the intake air is necessary to calculate air density at the air mass meter.

There are 2 temperature sensors on most cars today. One is for the "Temperature" light on the dash to warn you if your car is overheating. The other is an ECT sensor or ( Engine Coolant Temperature sensor) this sensor is used to send engine temperature information to the on board computer in order to control the air fuel ratio of the engine for optimum driveability and performance.

it just keeps track of the temperature of the engine
depending on the car older ones have a light or a Gage on the dash
that is all they did
newer cars besides previous they also help with controlling fuel mixture for warm or cold engines and also radiator fans
