We all have friends who do this, and I'm just curious how other people deal with it

Be honest with her on what you feel. The only problem is that most people are not able to accept the answers that they get. The best way will be as far as I, "I find you as a good close friend so to me I don't see you as a pretty woman but I do see you as a very close and lovable friend and when a person finds a true friend they find a good thing". That will be the way I put it.
