My backhand is very weak and since I'm ambidextrous, it's more easier to switch the raquet to the left hand and hit the ball forehand. Is this permitted when I play, say at Wimbledon or the French Open?

The rules do not state which or how many hands you may use to hit a ball. The rules do state that you must not use 2 racquets, one in each hand.

Yes you can do what you want.
Proof
Maybe 8-10 years ago there was a japanese woman player that was left handed. But from her culture that wasn't accepable so she had to learn to play with her right hand. And I still remember watching her at Roland Garros when sometime she was using her left hand to hit when the ball was too far to reach with her two-handed right-hand backhand.

You are allowed to play with either right or left hand... I don't remember a pro player who plays like that, but I believe one of the Jensen brothers used to serve with the right hand in the deuce side and with the left hand in the ad side...

You can, there are a lot of people that do it on the high-school level, but when you go up to a heavy hiter you will run out of time to switch hands.
