About 2,000 euros for a comfortable living including a few meals out. (Always do tapeo at cafés it is less expensive then the classical restaurants) The seafood restaurants along the paseo marítimo are also nice. And one can't live in Valencia without learning to enjoy all the different paella dishes...
As to living quarters...
The center of town is a bit more expensive for rentals...
If you are going to have a car, try finding a place in the "outskirts"...
Manises, near the airport, for example, or Paterna.Then there are the places along the beach front, but they are a bit more expensive...(for ex. Tabernes Blanques, (to the north), Silla (to the south).
For groceries, your best bet are the hypermarkets....such as Carrefour, and the local supermarket chain MERCADONA gives excellent quality for its prices. Then there are the discount stores like LIDL, DIA & PLUS.

I think is less expensive than Barcelona. But is not cheap. Valencia is a wonderful City and is growing faster than many cities in Spain. I will highly recommended a visit to " La Ciudad de las Artes y las Ciencias" to see extraordinary architecture. 2007 maybe expensive because the Americas Cup will be held in the city port.

Apartment, entertainmenty and living expenses....I'd say about $2,000 + a month for a nice middle class existance. Less if you get a roommate.
