My guess is that because all of the media regarding immigration, they feel the need to defend themselves. In doing that they remember what their culture was in latin america, and the strong catholic background includes many holidays. If every other day was a holiday in America, and you went to live in Mexico, wouldnt you continue to celebrate? I would...and do. I celebrate Thanksgiving when I am in Mexico and the 4th of july. I may just make food or something, but I dont forget my culture. I think it is the same way, and because it is getting easier for hispanics to celebrate their identities, with Latin stores and restaurants, increasing latin communities etc.

Very strong family values and traditions. I always visit my family on Christmas, I always kiss the elders on the cheek, I always eat even if I'm not hungry (or I get yelled at for being skinny because it's rude to not eat), etc.
