Sorry, this is a grumpy non-answer, but kind of a reminder.
Africa is a lot of different countries, each with its own distinct styles of food. Here is a list of some of the countries in Africa. I may be forgetting a few:

Eritrea, Ethiopia, Gabon, The Gambia, Ghana, Guinea, Guinea-Bissau, Kenya, Lesotho, Liberia, Libya, Madagascar,
Malawi, Mali, Mauritania, Mauritius, Morocco, Mozambique,
Namibia, Niger, Nigeria, Rwanda, Sao Tome and Principe,
Senegal, Seychelles, Sierra Leone, Somalia, South Africa,
Sudan, Swaziland, Tanzania, Togo, Tunisia, Uganda,
