Have you ever seen one? I am one but it's not very common.

''I think there are at least 200 women sushi chefs in Japan,'' said Toshio Suzuki, the owner-chef of Sushi Zen in Midtown. He has trained two women as sushi chefs, Takako Yoneyama, 52, the owner of Taka in Greenwich Village, and Miho Tanaka, 43, at Sushi a Go-Go near Lincoln Center.

For a woman to become a sushi chef in Japan has been easier since 1999. That year, Japan revised its Equal Employment Opportunity Law to mandate equality in hiring and promotion. Japan also lifted a ban that prohibited women from working later than 10 p.m. But laws alone weren't keeping women from becoming sushi chefs.

I have been in Japan for many years and never met a female sushi chef, it all man's world when it came to sushi but there are some around..Most are apprentices and they find it difficult to work with male sushi chefs that is why they just remain apprentices. Japan has million population but the sushi female chef is really not being recognized.
nice to know that you are a female sushi chef. I love sushi but I am picky about sushi, I don't eat sushi that is not fresh, I don't mind paying more if it is really good. that is why sushi chefs are highly paid job in Japan for their dedication and good reputation in making their sushi fresh on the counter.

I live in Northern California and I must say I have seen at least five or six in our area. We eat Japanese food quite often and at the two we go to the most there are women Sushi Chefs and in the grocercy stores around here each has a Sushi Chefs are all women.
