I know the common myth is that they do when scared and I know that's not true. A lot of places base this on observations made in captivity. However I've also seen trivia that states ostriches stick their heads in the sand to look for underground water. Is this true?

Most of what I know is in the above article.
You do mean "a hole in the sand", rather than just "sand", don't you? (That is what I'm assuming.)

I'd say that ANY thing/one would if thirsty or hungry enough, & the water/food was in that hole. And since the ostrich eats just about anything, I imagine they have to stick they're heads in holes farely often to catch they're prey!
So, I say, YES -- but not out of fear, or because they think they are sufficiently hidden from danger because they can't see it, so think it can't see them either! (The latter is what I used to hear a lot.) I think it's just a part of their hunting/dietary habits.

I also know that ostrich feathers make excellent dusters! (:

According to wikipedia, no. Ostriches do NOT in fact stick their heads in the ground. It was a misattributed feature started in the Roman days.
