I didn't know that a fig newton can be made to evaporate.

Latent Heat is probably not a very good term for use in complex mixtures.

The "calculation" would be very difficult without simplfying assumptions such as "assume newton is half water and no other volatiles are significant". Then its easy.

You would be better off by simply measuring the latent heat by putting a newton in a calorimeter and then heating it through whatever phase change you can find and measuring the latent heat.
