It's a confusing story. The orginal band played as Jefferson Airplane from 1965-1972. Instead of formally breaking up the band members decided to morph into two new bands, Hot Tuna and Jefferson Starship.
When the final original member of the band, Paul Kantner left it in 1984 he sued over the use of the name Jefferson. The lawsuit was settled by the band changing its name again to Starship. Check out the links below for all the details.

Ok - for starters, there was no one named Jefferson in the band, don't know where that person came up with that!
Basically, it was a way of re-inventing themselves as a group. If you listen to some of their earlier tunes while they were the Airplane, Grace Slick did most of the vocals along with Paul Kantner. Then Grace left the group and the next thing you know its Jefferson Starship. Later, they dropped the Jefferson for reasons known only to them. And you left out the spin-off group, Hot Tuna which featured a number of Starship members as well.

Jefferson Airplane changed their name to Jefferson Starship to update the musical feeling of the band; give it a more futuristic feel, they also changed lead singers from Marty Balin to the Starship guy. As for Jefferson Starship to Starship; not all members of J.S. were in Starship, especially the main guitarist and writer of songs for Jefferson Starship (I believe Kanter), so it was more of a legal thing; but again, Marty Balin, Grace Slick, and Kanter reformed under the original Jefferson Airplane.

From what I remember they were trying to update their image and be more modern. They liked the Jeferson and thought to sound more modern and futuristic they would add starship. They later in the 80's droppeed the Jefferson and became Starship before they disbanded
