It's called "binkying", and is a sign of wellbeing and happiness, and shows that they're happy and uninhibited around you too! Here's a good explanation -

They are happy! Like people who scream when they win the lottery. We should learn from bunnies, imagine being so happy to be a human you just had to jump for joy.

that is what bunnies DO. If they're little the reflexes will do that - totally normal. Even older ones twitch and jump

I don't know but I bet it's a hoot when they do it,
Cats do it to sometimes and then they run around like they're crazy. I always get a good laugh out of it. Enjoy your bunnies!

that's what they do, it's like they are practicing taking off quickly. My Bunnies did it when they were little but they usually grow out of it.

they are probably doing that because they want to get out or they are just being goofy. my rabbits do that all the time. nothing to worry about

they might be nervous and get startled...if you think it is a real problem, I would take them to the vet (or call a vet to see if this is normal)
