Since the Columbia disaster, they've only used Discovery. To my knowledge, Endeveour and Atlantis are still in the fleet.

It is because Endevour is grounded for
maintenance(but will go up soon) and Atlantis
is getting ready for mission STS-115.
Discovery has been going up because it is the
only one (so fair)that has the new arm that
lets astronauts see the belly of the orbiter.

They didn't use any shuttles after the Columbia disaster yet. However, a Discovery launch was scheduled on Saturday, but frequent afternoon thunderstorms in Florida cancelled it. They tried again on Sunday and thunderstorms again. They're going to try again tomorrow afternoon.

Putting all their eggs in one basket maybe?
Maybe it is cheaper to keep one in tip top shape then to keep all of them up to date. Less manpower, less funds, less things to have to inspect
