We're thinking about visiting, but don't know if things are open that week.

A lot of things are closed on Sunday and Monday, but you'll still find many tourist attractions and restaurants open if you're in a big city (Rome, Venice, Florence, Milan, Naples, Sorrento, etc). I was in Venice and Verona for Easter 2005, and we didn't have any problems keeping ourselves entertained. Do make sure to make dinner reservations though!

I was in Rome for Easter 2005. We were able to go to lunch, dinner etc in restaurants on Easter Sunday. The night before pubs and discotecas were open and public transportation was running on the same schedule.
