Just get a hold of Iceland Naturally. They'll help you out. If it were me, I would plan a hiking trip and spend some time in Reykjavik. Definitely go in the summer. I would plan to leave in the last week of May because the rates go up on June 1st. Plan at least 10 days so you can get a real taste of the place. Don't worry about speaking the language. Most of the people speak English.

Probably best to go in the Summer when the roads are more navigable and you're not snowed in. Just buy a map when you get there, hire a car and drive wherever you want. It's not that big a place and it has good roads so as long as the conditions are good driving is safe and you shouldn't get lost. There are plenty of waterfalls and geysers and other beautiful sights that will all be on your map and possible to reach by car.

I would recommend Icelandair - they fly from the US to Europe, using Reykjavik as their hub. You can stay in Iceland before flying to/from Europe.
