Don't tell her you don't have feelings for her. There is absolutely no need to hurt her in this way.
You could explain that you are still in love and hoping to reconcile with your girlfriend. Let her know that even if you can't work things out with your girlfriend it is going to take you a long time to recover and you will not be dating for a while because it would not be fair to anyone.
Although you should not tell her, it is probably not a good idea to date someone whom your mom works with. Things could get uncomfortable for your mom if you dated and then broke up with a co-worker of hers.

Do not listen to those who advise you "just tell her how you feel"; it is neither necessary nor kind to tell an admirer that you find them lacking. Simply continue to be polite and courteous, but without any hint that you return her admiration. If she asks you out, you thank her but "have other plans." If she calls you, tell her you are in a hurry and ask the reason for her call; then cut the call short. Unless she is a total moron, she will get the idea.

Just try your best to avoid her. She'll take notice and might read your signal. Its nice to advise that you tell her honestly and frankly about your feelings. But, what if something happens and one day, you woke up in love with her, i dont think you can take back what you have said. Bottomline, you'll never be sure of whats in store tomorrow. So just ignore her...thats it. :-D

I'd just tell her "I'm not interested in dating anyone right now. I just recently got out of a long relationship and need some time for myself." Then she knows it's about your feelings, and she SHOULD be understanding. Kudos to you for being upfront about what you're feeling.

When did we stop telling the truth in relationships? You can tactfully say "no" without lying.
Tell her your still recovering from your breakup, and while you are flattered she thinks of you in that way, you can't return her feelings, and she deserves someone that can give her their full attention.
