Yes, you can use any brand of "Secure Digital" (SD) card or MultiMedia (MMC) card. You're better off to get the Secure Digital card because they can store more data compared to the MMC cards.
More info on the two types here:

Some people swear by a specific brand but although something maybe branded by one name, the underlying manufacturer can only be found when you check it in the "Card Info" program in the palm. (eg. A Sandisk card may show up as a Panasonic card).
The largest sized SD card you can use on the m125 is 1GB so don't even buy anything larger than that as your device will not support it.

You may want to balance the price, the storage, the speed and probably better to stick with the popular brands like Sandisk, Lexar, Kingston, etc rather than going with a brand that not many people know.

You can use any memory cards, but you got to check the manufacturer's spec if there is a limit to the memory card expansion. The Palm Tx can accept up to a maximum of 2MB card only. It might be less on the m125.

You can use any SD memory card in your m125. I did not realize the m125s were still around.
The Palm is a most useful tool. Congratulations.

Yes, you can use any memory card that is the right type - they are not model specific.
