Rapid Eye Movement.
They found the name R.E.M. while flipping through the dictionary.

Celebs are asked the same questions over and over again and sometimes they even make up answers 'cause they are tired of the same questions.
There's a story that when R.E.M. was deciding on their name they thought of several like twisted kites or cans of pi** but finally they looked in the dictionary to find something they liked. The came up with R.E.M. which meant rapid eye movement. However, the guys in R.E.M. have also said that it was originally rapid eye movement but that it could mean anything that fans want it to mean. So it could mean Real Eclectic Mush.

Actually they picked their name from a dictionary because they like the ambiguity.

The band did note that it stood for Rapid Ear Movement, a play on Rapid Eye Movement, in one of their boxset album.
