I have to vote Blazing Saddles with Young Frankenstein and Spaceballs close behind.
However, the movie NO ONE remembers that rocks the Mel Brooks house is High Anxiety (only available on DVD in the deluxe box set...so far). A rip on Hitchcock films.

The Producers (1968)!!!, starring Gene Wilder and...what's his name...Zero Mostel? (I guess he was a well-known comedian back then.) If you haven't seen it, you've gotta! It's been hailed as one of the funniest movies ever made--and oddly, I didn't see it until 2003. LMAO!!! Here's the Wikipedia link for it:
