They use specialised equipment and surveirs! These are people who use these instruments and measure these distances and hights it takes a lot of time to do it but some one has got to do the job. The equipment they use is called dumpy levels and specialised surveing measuring equipment these equipment are uplinked to satelites and gives the operator his exact location. This equipment is so accurate that if the operator requests a location it will put him as close as 1000 of a mm to his actual position!

I think most surveying is still done with transits (devices which are able to measure angles and distances), although I believe some transits now use lasers and GPS to improve results. Surveyors may then use trigonomentry to help interpret the results. From what I've seen of it, it really takes a lot of time to do. As far as large countries are concerned, I think they are measured by taking lots and lots of smaller measurements and adding them up.

aerial devices, I suppose that cuts out the unevenness doesn;t it?
