There are lots of GREAT restaurants in Seattle. There are too many to list, but here is a sampling. There is a strong concentration of good places in Belltown (just north of downtown), but you can also find places scattered around town.
Some great places in Belltown/Waterfront/Market
Flying Fish (seafood)
Cascadia (northwest, great tasting menus)
El Gaucho (best steakhouse in Seattle)
Dahlia Lounge (northwest)
Palace Kitchen (fun, northwest meets louisiana)
Waterfront Seafood Grill (seafood on a pier)
Chez Shea (romantic in the market)
Or places scattered around:
Volterra (modern italian in ballard)
Canlis (a seattle institution)
The Herbfarm (best restaurant in Washington State, in Woodinville east of Seattle... but be prepared to pay for the privilege)
Enjoy, and have a great time!

Dining out is an entertainment, preferably shared with friends. Like going out to see a movie, I think it should be adventuresome and teach you a little something you didn't know before.
That said, a new restaurant opened in Belltown about a month ago. It's called "Umi Sakehouse" and it's a door or two away from "Flying Fish".
Since eating there my first time, I've been drawn back half-a-dozen other times. The menu is extensive. I've ordered something different on each visit and still have only sampled about 10% of what's offered. Each time, I've tasted (and enjoyed!) something that I'd never tasted before.
If you love sushi and sashimi, this is a great place to indulge. If you don't like raw fish, there are plenty of plates of grilled, steamed or baked seafood and meat.
The ambience is enthralling with many different "areas" to choose from and each with its own special "feeling". Yet the entire restaurant is visible to you no matter which "room" you're in.
Besides sake, there's a full bar and wine list.
This is a great restaurant and very much fits my idea of what dining is all about.

I love Tango's Tapas on 1100 Pike. The prawns are to die for: (chipotle-pepper-flavored tiger prawns with a sauce made from pumpkin seeds and cilantro) and the sea scallops (marinated in lime, served with sweet black vinegar) are delicious. There are so many delicious and unique dishes! And you have to save room for what has been voted the best dessert in Seattle: El Diablo
(Bittersweet cube of sinfully rich dark chocolate graced with cayenne, spicy almonds, cocoa nibs, & burnt meringue finished with a tequila caramel sauce)--mmmmm!
Here is a copy of their menu:

Go eat something for me-- I am stuck in Sweden and dying for prawns, a mojito and el diablo!

The Saghetti Factory has a location there. There's also a chain in nearby Tukwilla that i've never seen another one of them anywhere else (Funny, because they're a chain). CLaim Jumper is GOOOD EATIN'! Steak, burgers, salads, and even pizza and pasta are there. You could also go to a Red Robin. There's tons of them everywhere in the US, but we have them here, too!

There are some outstanding Korean barbeque restaurants not too far from the SeaTac airport. Very authentic, large portions, and reasonably priced. But you have to like Korean food for this to matter.

I agree that Beppo's is great and very entertaining (huge family style portions). If you like awesome Mexican food, try Gordito's on 85th and Greenwood. The burritos came in regular and large sizes (which are bigger than your head), the salsa is fresh and warm (!), and it is always busy. I'm partial to the steak quesidilla...carne asada, cheese and guacamole. I'm hungry just thinking about it!
