That is true. Exposure to light can cause chlorophyll production which grows solanine on the surface of harvested potatoes. In high concentrations, solanine is toxic.

So, keep your potatoes in the dark and keep 'em brown. No lesser authority than the "Joy of Cooking" cookbook says, "Don't use sprouted potatoes that are green from exposure to light, as the green portions as well as sprouts are poisonous

Yes, potato greens are toxic. You are not supposed to let your livestock eat them either. I have read of people getting sick from eating potato skin that was exposed to sun enough to get green.

yes they are they are part of the nightshade family. i.e. dont eat them.
