Here's a quick rundown on the advantages and disadvantages of copper versus fiber, which are basically inverses of each other.
Fiber Advantages:
Higher bandwidth
Longer distances
No sensitivity to electromagnetic interference (EMI)
Better security (hard to tap and no emanations)
Fiber Disadvantages:
More expensive
More difficult to install
Copper Advantages:
Cheaper
Easier to install
Copper Disadvantages:
Lower bandwidth (versus fiber)
Shorter distances
Susceptible to EMI
Not as secure

CAT 6 is copper based, so it can bend easier, fibre is made of glass and breaks very easily. Fibre and fibre devices(NICs, switches, etc... ) are also very expensive, where CAT 6 doesn't cost as much.
Fibre is very high speed though. CAT6 is susceptible to some interference, while fibre, being light based, is not susceptible.
If your wiring a home network, go with CAT 6. Its cheaper and harder to break.
Fibre(right now) is mostly for very high speed data transfer, such as server links, and the internet backbone.

I'm a Sr. Network Engineer (not trying to show off) but the best is CAT5e - it provides you with Gigabit speeds and it's easier to work with -Fiber and CAT6 are more "sensitive" to terminate. The are pretty much all CAT5e's nowadays but just double check to be sure. Fiber has better support over large distances but I doubt that you need more than about 300Ft.

Carbon Fiber. It's the more expensive one, but look at cars for instance. It's light weight, very strong, and great if you're a drifter or racer. I guess it depends on what you're making though.

fiber uses light signals to transmit and cat 6 uses elec. fiber is very expensive. fiver is faster than cat6 but "normal" people cant install fiber.
