Busch Gardens is a lot of fun and your 3 year old will love it. The best shows, exhibits, and rides to check out are for your 3 year old: the shows @ Stanleyville Theater (shows change every one to six months, so check out website to see what's playing when you go: http://www.buschgardens.com/buschgardens), The show KaTonga, and the Wild Wings of Africa. While you are there you should really check out the: Edge of Africa a self guided tour to lots of beautiful animals (get there early though)...Next you should check out the Myombe Reserve: The Great Ape Domain...Cheetach Chase (family roller coaster), Ubanga-Banga Bumper Cars, Lory Landing (birds galore), Flamongo Islando (where beautiful flamingos hang out), and last but not least Land of the Dragons (the best kiddie park in central florida). Busch Gardens is wonderful, a whole different feeling from the "totally designed, totally controlled" feel of Disney. It's more like your hometown zoo, with roller coasters and a kiddie land. The staff is mostly local young people with real personalities, not the carefully scripted "robots" working at Disney. And the prices for food and gifts are real world prices, not "prisoners of the mouse" prices.
I urge you to plan on visiting over 2 - 3 days, so you can have a nice relaxed pace. There are a couple hotels within walking distance, not great hotels, but not expensive either. If you're not staying within walking distance, you might want to pay extra for a few days of VIP parking so that you can easily return to your hotel in the middle of the day if need be. But the park closes at sunset or earlier (so the animals can sleep), so you might be fine spending full days there. Bring something to read or headphones, and relax while 'PeeWee' naps in the stroller.
The shows are good, but not sure how much appeal they'd have for such a little one. You could always just sit near the rear and exit if he/she gets fussy. But he might be fascinated by the broad visual humor, bright costumes, and happy music. I think he'd like the animal oriented exhibitions a lot. And the hippo feeding.
When you feed the Lorikeets, watch out. Those 'sweet little birdies' will nip your hand!

I personally love Busch Gardens, the rides are the best! Even though I've been there countless times, I've never been to the shows (unfortunately) but I definitely want to see them. BG has a special kiddie land just for the little ones called Land of the Dragons with a few rides, a huge fun treehouse and many more things. Great, where members, we live on the West Coast. They have a child area, shooting fountains, a rope bridge, Kiosks, bathrooms. Plenty of animals, LOVE IT!!!!
