This is a term that began many, many years ago in reference to the town's leader who would "undertake" the responsibility to see that the corpse was handled correctly, the funeral arrangements made, the family comforted. This was the "person" who 'directed' and coordinated the activities involved. They called them "the Undertaker" because they would be the only one the family had to deal with.
