Here in Texas we usually need two cows for a nice plentiful burger. We can manage one nice big sausage from an average pig, but here the average pig is much bigger than average.

a steer yieds about 30% usable meat
so a 500 steer would be about 170 # meat
680 1/4 # burgers more with fat added

Not enough to warrant the resources it takes and the waste created to produce one. We eat TOO MUCH of it and are paying the price with obesity and high cholesteral.

OOOOOOOOOOOOOOH dont ! I cant eat either, they've both got 'Mechanicaly removed meat', and they put in all the things people wont buy/eat, and mush it up.
That is, except you can find a good butcher...........
