Three things you can do that will assist in your bike's running cooler. Try a different spark plug, only run premium fuel, and change to synthetic oil. If it only has 4k miles on it, I'd have the dealer check the sensor to see if it's defective. At least they'll be documenting the problem for warrantee purposes. You may also have a restriction in your oil recirculating system, or not enough oil.

a sportster is air cooled and shouldn't over heat unless you are at idle for a long time. Are you sure it is over heating ? I would check my coil. Also check your oil. Get a spark tester and when it dies check to see if you have spark at the plug that will tell you a lot.

Overheating by itself won't cause it to shut down - you have an electrical component that when it gets hot fails and when it cools will work again.

Can have leaking intake seal causing one cylinder to heat. Spray intake seals with carb cleaner etc, to detect leak.
Can have timing too retarded.
Can have blockage in one carb circuit, causing lean run.
ECM could be going bad, cool black box with ice and see.
