Funny you ask. Our close friend is head of the German Department at Texas A&M and says it is a great school. However, you might want to check schools that are known for strong history and language programs.

Have you thought about the main campus of A&M; or Texas Tech or UT? I ask about A&M and Texas Tech because both have just received BIG grants from the Mellon foundation to boost their humanities programs; they're making hires in literature programs, bringing in postdocs, etc.
UT is of course, for graduate school, a totally top-notch place in English studies. Another great choice in Texas is Rice University--for just about any Humanities field.
If you're thinking of going on to grad. school, I think you'd do better to attend undergrad at a school with a bit more of a "name" and a national reputation: UT, Texas Tech, A&M, Rice (assuming you want to stay in Texas). Rice has just made some fantastic new hires in the English dept.
This is of course not an exhaustive list of high-profile Texas schools, and as you can probably tell from the above, I'm in the field of literature, not history--so my suggestions may be a bit slanted in that direction.
Best of luck, do good work!
