I am guessing you are using an electric shower or Gas perhaps? one that heats the water as you need it. When you are opening the showerhead fully more water is needed per second so there is less time for it to heat as it passes through the gas boiler or electric heating unit, when less water is required it has a bit more time to be heated. To get it to stay warm when open fully you need a more powerful gas boiler or electric shower heating unit.

It does sound like the balancing valve is hooked up backwards. I know this is going to sound easier than it usually is, but, if the above is the problem, you may have to hire a plumber depending on the location of the valve.
If there is an access panel, you're lucky, there usually isn't. In this case you'll just have to unhook, cut and switch the hot and cold water feeds.
If there isn't an access panel, you'll have to make one. Please, please be careful if you have to cut drywall. There may be electrical wires behind it!

I believe the problem is that your cartridge in your handle is flipped. You would need to cut the water at your meter, then you will need to open up one of your hose bibs outside, in order to let most of the water in your lines to get out. Once you have that done, take off your handle set assembly, take out your cartridge and rotate it 180 degrees and then replace the cartridge and your handle set back together. More than likely, your cartridge will be held on by a fork looking thing. Get a poair of pliars to get it off. After all that, close your hose bib you opened up earlier and then oper up your water back at the meter where you had shut it off. Good luck.

If you have a double valves one hot one cold, it could be the diverter is directing the cold water to the hot and cold so the water is not being mixed properly. Other things could be that your water heater is not heating properly. Check hot water heater to make sure it is heat the water.

it sounds like your ballencing valve is in backwards,is this a new instalation? turn the main water supply off, and remove the valve and rotate it 180 degrees. this repair is for a single handle valve.

If this is a single lever valve, one side is hot , one side is cold- somewhere in between it blends to comfort yu like.
