Blood tests give a picture of what's going on in your body that may not be apparent. When I get a regular physical, my blood tests show the amount of stuff in the blood which the doctor compares to normal:
Cholestrol levels for HDL and LDL
Triglycerides level
liver functions
Prostate Specific Antigen level
I think also probably red & white blood cell counts

You need to be more specific..there are many tests out there..if you are looking for some routine tests..there are chemistry tests that check your blood sugar, kidney functions, potassium levels, blood counts which show your number of red blood cells, whether you are anemic or have an infection, if you have enough specials cells for blood clotting..some other tests may show if how your liver functions are..but most importantly your doctor will get those tests that are specific to what your symptoms are or what your complaints are..

When a doctor does a yearly/bi-yearly blood test they are checking to see if you have high cholesterol, liver problems, thyroid problems, high sugar (would indicate possible diabetes) basically it is to make sure you are healthy. I know I missed a few but you get the idea.

It depends on your personal medical history. A blood test can show many things, so he gives specifics to the labratory based on his concerns for that patient.
For example, if he's concerned about a thyroid condition he will have the Triglyceride levels checked.
