You may want to consult Poet's Market, a book with helpful information for poets who want to be published, such as yourself, as well as listings of publishers who publish poetry. Understand the process is strange. I've been in print since 1966 and I wrote the ULTIMATE book on BASIC. 1,000 pages long (probably my problem) with thousands of entires, cross references, substitutions. EVERY publisher turned it down.
Sexy books and non fiction are often easier to place. Non fiction makes little money, except for one book written by a computer programmer that shows where all the nude scenes are in commercial movies by hour minute and second! That book combined SEX with NON FICTION and is a best seller that gets updated yearly and he made so much money he no longer PROGRAMS!
YOu need to make a proposal, a pitch. Why is your book so great, what makes it better than others books, why will it sell, who will it sell too. You need an outline for the entire book and double spaced, single sided sample chapter totally perfect as they will not edit common flubs.
It must be as good as a Masters Thesis turned into a college for your advanced degree, that will be reviewed by the entire department.
Some companies allow on-line submissions.
For fiction they may want the entire manuscript.
Expect to get rejected. Expect it to cost your hundrdes to make your submission. Start with query letters, asking if they'd be interested, outlining your book (coverage -- your book in 200 words or less).
Include SASE if you want a reply.

There is a book called how to get published found it at Borders. Cost 13.95 and it tells all the ends and outs of getting published. Even list agents and publishing housing in the back by genre. There are also self publishing houses

First, many big publishers will not accept manuscripts from the average joe. Many now require you find an agent first.
If you want smaller publishers, I highly suggest going to this site - Preditors & Editors. www.anotherrealm.com/prededitors/ They poll published authors who share their experiences to keep people from falling for less than reputable publishers and agents.

If you go to a bookstore under publishing they will have adresses of publishers willing to look at your work.
