If I were looking for some cool higher-math stuff to do with Java I would look at at the "Numerical Recipes" series of books. They include how it works and source code for doing numerical integration, differentiation, root finding, and matrix solutions. They also show how to solive pde's numerically using finite elements and finite differences.

If you click the link you will find that its C. One of the fun things about Java is that you can embed C or even assembler into java. How to do the embeding is a different question than how to make the phone do fun calculations.

You could get a commercial scientific calculator software for the phone.
