For example, I used to open attachments from my e-mail with Adobe and now, whenever I open them, they open with Kodak Easy Share. How do I change this? The picture, image, file is an attached file to my e-mail.

Right click on one of the image's and you would find an option saying OPEN WITH..
in that you would have an option to Choose Program.
When you select it you would be presented with a list of programs installed in your computer.
Select Adobe (the one you originally used to use)
At the bottom on the same window there would be a check box Saying Always use this program to open such file types.
If its not ticked put a tick mark in it and press ok.
From next time onwards all your image files (if you used a .jpg file to do the above steps, all jpg/jpegs) would open in Adobe.

Other way to do is open the Adobe software and goto options and then file types. Select all the common image file types for eg JPEG/JPG/BMP etc and put a tick against them and select ok.
That would make adobe default program to handly all those file types.

Hope this helps.

You can right-click on the image and choose "Open With", Then once that program is open, you probably will have a choice to make it the default program from now on. Most programs have settings to check and see that they are the default program everytime an image is opened.

You can right click on the image and change file association.

You have to change the file association with that filetype.

You may be able to do it in the settings of your choosen image viewer (there maybe an "associate with file type" section).

Alternatively, you can right click an image and select properties and then select the Opens With.
