Depending on the course level, a program that can implement a simple game like checkers or sudoku might be sufficient. Also, you don't specify if the course requires use of GUI or merely a text based project.
You might also look at some simple AI applications, where the program "gets smarter" as it progresses, like a "rat in a maze" puzzle.

in case you have an interest in enforcing algorithms, photograph processing must be between the proper options. this could basically require C/C++ programming skills and would not desire any style of stepped forward programming wisdom (C#/Java) which i think of could be worry-free at your point. in case you observing greater beneficial project in strengthen technologies, there must be as many possibilities.
