Bulls are certainly colour blind - which can be seen from the structure of their eyes. They see in shades of brown and red comes off dark enough that it is highly visible to them. Also it is the flapping movement which would attract a bull's attention. Finally, for the humans in the audience, the red of the matador's cape and flag is highly visible and attractive and represents danger, excitement and even blood.

myth: red attracts bulls.
myth: color blindness means you don't see any color at all.
My uncle was color blind, but it was something like greens he couldn't see.
Now, I do know that the right bull will go after a bright color in movement.
To my understanding, it is the movement that attracts the bull, not the color.
The only reason that they still use red for fighting bulls is more for tradition than anything else.
'Course, ask me? I think torturing such a beautiful animal like a bull, stabbing him time and time again until he's blinded by pain, fear, and rage is cruel.

bulls see red as a darker color then there surroundings, the reason the bull chases the cape is the movement not the color, you could use any color, as long as the matador is not wearing too much of the same color. Red is the color of blood also.
