I love how stupid and ignorant the other answers are. From a REAL Hollywood prospective:

An assistant basically manages the star's life. They have enough going on with their actual JOB that they need someone to organize their life. Make their scheudle and arrange that they can make all of their appointments. Answer phones and make sure the stupid calls are blown off in favor of the important ones. They make sure that gifts are bought for holidays, weddings, birthdays, etc. They make sure travel to other countries is handled for press junkets. They make sure their accomodations are taken care of.

And believe me someone like Bruce Willis' assistant? They have an assistant. this stuff gets hectic.

Bruce Willis' assistant probably hangs out at high schools trying to get Bruce a date, and Paul Reiser's assistant probably hands him tissues while he cries over a dwindling career.

Assistants to stars are there to boost their egos, and tell them how great they are, and run all the errands and do all the boring stuff the star doesn't want to do themselves. This will sound gross, but Prince Charles in England has assistants, and a magazine once printed that he needed to have a urine test, and when it came to peeing in the jar, he had one of his assistants hold his appendage over the jar!
